Steve (and Michelle) and I have been friends for several years and I have been following this blog since day one. I commented yesterday that I wanted to share some pictures of the primal/paleo meals I have been making, and Steve graciously added me as an author to his personal blog. I’ll try not to screw it up or take up too much space. Just some food pics, some preparation comments and an occasional weigh-in. My first official weigh-in was on Saturday, 10 FEB, and it was a highly disturbing 265. Yikes!
I really like red bell peppers, so yesterday I stuffed 3 of them for our dinner. (It is typically my wife, my daughter, and me at the dinner table these days. My sons are off at college.) I loosely followed this recipe.
I sauteed chopped onion, mushrooms, tomato, and olives in about 3 tbsp of bacon fat. Then I added 1 pound of ground buffalo and browned, seasoning with salt, pepper, and garlic powder.
I filled the peppers and baked at 375 for 35 minutes. They were delicious!
